This month's recommended white and reds from recent tastings, and a brief restaurant review.

ADAMVS TÉRES Howell Mountain 2010 - Denise and Stephen Adams - not Adamvs like the label - are credited with revitalizing Chateau Fonplégade, a Saint-Émilion Grand Cru Classé, in 2004.  In 2008, they purchased their "idyllic" California property.  Next, they brilliantly hired Philippe Melka as their winemaker.  With the structure of a classic left bank Bordeaux, this blue ribbon winner was aged in 80 percent new French oak for 22 months.  Almost perfect balance of all components.  Only 975 cases produced.  Perfect with beef tenderloin.
